Let's Get Sauced

This is it!  We’ve been working for this moment non-stop for 2 years.  We can finally make our sauces and serve some very anxious and patient customers.

The ferment room smells absolutely amazing with all the peppers and herbs and vinegars.
Giving the bottles a bath in sterilizing solution before their prefilling warm up.
When the peppers were put up for fermenting, each sauce's herb infused vinegar was prepared and let to sit and think about what it's done.
The deep red brew delights all the senses. Delights/burns, what's the difference?
Looks like we got a little too excited during our first run. It's hard not to.
All that time spend in the garden. All that scrimping and saving money. All those years working in kitchens and taking those classes. This is what it culminates to. Our first batch of sauces in our new, perminent home.
There's no sitting on our laurels. We gotta get another batch of peppers thawed and in some brine. Another 5 bushels are on the way and there's more sauce to be cooked up...
