Bacon is one of the most greatest foods ever. By itself, next to eggs, in a sandwich, or whatever, bacon is a near perfect food. But what if there was a way to make it better? Legend has it, there may be a way…

We start out with a nice slab of uncut bacon. Its cheaper than the pre-sliced stuff and you can control the thickness of the strips. ‘Thick sliced’ bacon in the stores just doesn’t cut it, so we do.

Before we cut it, we sprinkle a tablespoon of spice mix for every pound of bacon. In this instance, it was Green Habanero and Friends. Lots of herbs in that one.

We covered the top and the bottom, and we did get the sides. Once it was covered, we let it sit in the fridge for a few hours to think about what its done.

Once we remembered we put the bacon in the fridge, we thick sliced it, put the strips on a tray, and baked them at 365F until they were done. I like my bacon crispy so it took around 20+ minutes.

Yea. Slicing it nice and thick after letting it sit with a coating of one of our spice mixes then baking it makes bacon better. Spicy and salty and chewy and crispy and greasy and bacony and all you can do is throw out words. Its too good to bother to explain using full sentences.
